Multiphase systems are common in industrial processes, in which many catalytic reactions are heterogeneous. In addition, some important types of polymerization are performed in mixed-phase systems, in which growth of the polymer chain occurs at the interface between two immiscible phases. (You may have come across an example of this in school chemistry - the generation of 6,10-nylon is often demonstrated by a condensation reaction which occurs between two species dissolved in different, immiscible solvents; reaction only occurs where the solvents meet, at the interface.)
The properties of multiphase multicomponent systems are therefore of some practical importance; it is this type of system we study in this experiment.
